4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Meat slicer observed with old crusty pieces of meat in guard and on blade. Also, Mixer observed with build up (Dessert area). CA: Clean and sanitize these food contact surfaces within 4 hours of use to remove all build up.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed several floor tiles missing throughout the main kitchen. Need to replace missing or damaged tiles.
