Observed in 2 locations in the main kitchen, 2 containers on pickles and 2 containers of cheese uncovered. Also observed in the walk-in cooler a box of exposed uncovered bacon. ALL foods must be kept covered at all times to prevent contamination.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed food debris on all prep-top surfaces. Need to increase cleaning frequency.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
No hanging thermometers observed in any cooling units. Please place hanging thermometers inside all cooling units close to the door where temps can be monitored several times a day.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
The 3 compartment ware wash sink did not have test strips. Must have sanitizer test strips provided to test concentration.
15C - nonfood-contact surfaces clean

Observed buildup of ice and food debris on the floor of the walk-in freezer. Need to keep cleaned at a more frequent rate.
