Observed dirty can opener blade. Foor contact surfaces must be cleaned every 4 hours or sooner depending on the frequency of use.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(x) - tmd, located in refrigerators/ hot holding (pf, c)
Need to place hanging thermometers inside all cooling units so all employees can monitor the ambient temp. It would help to start logging temps. All foods must be held at 41 or below. Advised to place thermostats in all cooling and freezing units.
14C - single-use/single-service articles: properly stored, used

Observed plastic spoons and knives being stored with handle in the down position. Keep single service articles stored with handles in upright position.
