PIC will drain, clean and sanitize ice bin near drive thru window by today.

Observed wet mop sitting in bucket by mop sink between uses. CA: After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. PIC will have employee to hang mop to dry between uses.

Observed a green cutting board near vegetable prep sink needing to be replaced due to not being in good condition. CA: During preparation, unpackaged food shall be protected from environmental sources of contamination. PIC stated that they have one ordered and it is on the way. PIC will have cutting board replaced with one in good condition.

CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. COS PIC had an employee take down the grates on the vent hood to have them cleaned.
