Observed no disposable hand towels at the employee handwashing sink in the kitchen area. CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with disposable hand towels. PIC put disposable hand towels at the employee handwashing sink in the kitchen area.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed brown/black build-up in large ice bin in main kitchen area. CA: Except when dry cleaning methods are used as specified under subsection (7)(e) of this Rule, surfaces of utensils and equipment contacting food that is not time/temperature control for safety food shall be cleaned: In equipment such as ice bins. PIC will drain, clean, and sanitize large ice bin kin in kitchen area by today.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed single-use items (plates) in packs sitting on floor under prep table in middle of kitchen area. CA: Except as specified in paragraph 4 of this subsection, cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored in a clean, dry location where they are not exposed to splash, dust, or other contamination and at least 6 inches above the floor. PIC put plates up and at least 6 inches above the floor.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed unapproved cooking equipment on prep table in middle kitchen area. CA:Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions. PIC stated that the owner is in the process of purchasing an approved piece of equipment.
17A - toilet facilities: properly constructed, supplied, cleaned
Regulation: 511-6-1.06(5)(h) - toilet room receptacle, covered (c)
Observed unisex restroom trash can not covered. CA: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins. PIC will get a cover to go over trash can in unisex restroom.
