Observed reach-in cooler underneath grill and walk-in cooler holding food items above 41 degrees fahrenheit. COS: Technician currently servicing both. CA: Routinely check items to ensure being held at 41 degrees fahrenheit or below.
Observed multiple dishes wet stacked in dish area. CA: Allow dishes to air dry first.
Observed handwashing sink being used to wash fish, other than its designated purpose. CA: Only use handwashing sink to wash hands.

Observed several food products not meeting the right cooling parameters to ensure food safety. CA: Throw away or re-cook in order to let cool properly. 135 degrees to 70 degrees in 2 hrs, 70 degrees to 41 degrees in 4 hrs.
Observed no sanitizer to be dispensing properly in dishwasher, dishwasher did reach proper temp. CA: Discontinue use until fixed, dishwasher sanitizer needs to be reading 50 ppm.
Observed sides of ice machine (inside) with debris build up. CA: Clean frequently.
Observed several dishes wet stacked. CA: Allow dishes to air dry before stacking.

Observed cold holding unit directly in front of fryer/char grill with pool of water collecting at bottom shelf. CA: Find the cause of leak, fix.
