Observed employee not properly washing hands while working with food after switching tasking and talking on cell phone. CA: Ensure proper procedures for handwashing.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed cutting boards on prep units with brown stains and cuts. CA: Replace cutting boards on prep units.
Observed dishes being washed in dish machine without proper sanitizer and 3-compartment sink being setup without proper sanitizer. COS: Sanitizer was changed on dish machine and bleach used for 3-compartment sink. CA: Ensure proper sanitizer level in dish machine and 3-compartment sink and repair parts.
12B - personal cleanliness

observed employee on food line preparing food with no proper hair restraint. CA: Ensure employees working with food properly restrain hair using hat or hair net with hair tie over 1" long.

Observed cups stacked wet without proper air drying near coffee station. CA: Ensure proper air drying before stacking.
