Observed staff attempting to start cooling process with food product sealed but on ice in bags. COS: Opened bag to allow heat to escape. CA: Loosely cover items to properly cool.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed several staff members not wearing beard guard while handling food. COS: Beard guards were put on. CA: If facial hair is longer than 1 1/2 inches, must wear hair restraints.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed several dishes wet nesting. CA: Allow to air dry before nesting.
15C - nonfood-contact surfaces clean

Observed cleaning needed on front, underneath, sides, and behind kitchen equipment; ensure plates are kept clean. CA: Clean more frequently.

Observed missing ceiling tile above mixer/mixer area. CA: Replace tile.
