Observed staff member with a beard longer than 1 1/2 inches long without a beard guard handling food. CA: Ensure all whose hair on head or face wears beard guard if longer than 1 1/2 inches.

Observed wiping cloths sitting in sani buckets without sanitizer present, reading 0 ppm on test strips. COS: Were changed out. CA: Ensure sanitizer is present in sani buckets at all times, reading 200 ppm.

Observed several dishes wet stacked on dish rack. CA: Allow dishes to air dry before stacking.

Observed employee with hair over 1 1/2 inch without a hat or hair restraint on working on cold line. CA: Anyone handling/preparing food must wear hair restraint or hat if hair is over 1 1/2 inches long.

Observed employee wiping knife off to be used to cut sandwich with cloth that wasn't submerged in a sanitizer bucket before usage, potentially a threat for cross contamination. CA: Have wiping cloths submerged in sani buckets to ensure food contact surfaces are cleaned properly.

Observed staff cleaning reach-in freezer, had food products in its packaging sitting on ground (brownies) until completion of cleaning. CA: Sit items six inches off ground until put back into unit, prevent contamination.
