6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed pan of par cooked chicken wings stored in reach-in cooler at 48F. TCS food items stored for cold holding should be stored at 41F or below. PIC discarded food item during inspection.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed sanitizer spray and two sanitizing buckets stored next to single use items, clean utensils and sodas. Chemicals should be stored separate from single use items, food, equipment, linen and utensils so they may not contaminate the items. PIC separated chemicals from items during inspection.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed single use small containers used to scoop dry food in multiple containers. Single use items may not be reused.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Observed employee drinks stored in reach-in cooler with food items. Employee should store personal items away from food and food prep areas.
