Observed multiples TCS food items stored above proper cold holding temperature of 41F or below; In prep-top cooler: tomato sauce 53F, sliced tomatoes 50F, diced ham 47F, cooked chicken 51F, and shredded mozzarella 50F. TCS food items stored for cold holding should be stored at 41F or below. All food items discarded during inspection.

Observed pink build up on baffle of ice machine. Food-contact surfaces should be cleaned frequently to minimize accumulation.
