6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed tcs food items stored in prep-top cooler and reach-in cooler above proper cold holding temperature of 41F. Prep-top cooler; sliced tomatoes 50F and shredded lettuce 54F. Reach-in cooler; shredded lettuce 49F and Spinach 45F. Spinach moved to walk-in freezer to cool, and all remaining food items discarded. Noticed prep-top cooler reading at 63F, advised PIC to not use until fixed.
