Observed cubed ham and waffle batter stored uncovered in reach-in cooler in main kitchen. Food shall be stored covered to prevent contamination. Containers covered during inspection.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed multiple wiping cloths on food prep surface in between use. Observed one sanitizing solution with rags stored in sanitizer below acceptable minimum levels. Wiping cloths shall be held between uses in a chemical sanitizer solution and that solution shall be maintained at the proper sanitation level. Wiping cloths relocated and low sanitizing solution remade during inspection.
