Observed multiple food items incorrectly stored, in prep top cooler: raw chicken stored behind raw beef and raw shrimp, and raw chicken measuring bowl stored on top of fresh cut green onions. In reach-in cooler: raw shrimp stored next to ready-to-eat sauce. All food items moved to their appropriate location during inspection.

Observed multiple food items stored uncovered, including raw chicken wings and shredded cheese in reach-in cooler and breaded shrimp in walk-in freezer. Items shall be stored covered to prevent contamination. Items covered during inspection.

Observed raw, frozen beef improperly thawing under a tiny stream of water in sink. Food shall be completely submerged under running water. Water increased during inspection.
12A - contamination prevented during food preparation, storage, display

Observed ice dripping and frozen to multiple food packages in walk-in freezer. Ice broken from packages, food secured, and drip contained during inspection. Service call needed on unit.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed active pest crawling across dishwasher in main kitchen. Most current pest control records dated 02-02-26. Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule.
