Observed multiple food items prepped in reach-in cooler without date label. Food prepared and held for more than 24 hours should bare date label. PIC added label during inspection.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed prepped beef stored covered during cooling process. Food items should be loosely covered or uncovered to help facilitate heat transfer during cooling. Food item uncovered during inspection.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping clothes stored in sanitizing solution measuring at 0ppm. Sanitzer storing wiping clothes should meet chemical concentrations. Sanitizer remade during inspection.
