Observed 3 Cases of Roma Tomatoes in which there were molded tomatoes in the case. 511-6-1.04(1) - Safe, unadulterated and Honestly Presented (P) (1) Condition. Food shall be safe, unadulterated, and honestly presented. Food needs to be free of mold and other mechanisms of spoilage. PIC had Tomatoes discarded.

Observed a build up of black mold like substance on the inside of the icemaker storage bin. Icemaker storage bins should be:
(iv) In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment:
(I) At a frequency specified by the manufacturer; or
(II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.
PIC will have cleaned at the end of the day.

Corrective action: Spoke with PIC, hot water pipe burst and burned out 2 fuses. It is in the process of getting fixed.

Corrective action: Packets discarded, spoke to PIC to maintain TCS items at proper temeprature.
