OBSERVED PEELED BOILED EGGS COLD HOLDING ABOVE 41F IN PREP TOP COOLER (OBSERVED AT 52F). CA: TCS FOODS SHALL BE COLD HELD AT 41F OR BELOW. COS: EMPLOYEE STATED EGGS HAD BEEN IN PREP TOP COOLER MORE THAN 4 HOURS. DISCUSSED WITH PIC AND HAD EMPLOYEE DISCARD EGGS. PIC WILL MONITOR TEMPS AND CALL FOR MAINTENANCE IF NECESSARY.
