2-1B - hands clean and properly washed

OBSERVED EMPLOYEE USE WIPING CLOTH WITH BARE HANDS AND THEN IMMEDIATELY PUT ON A GLOVE TO START PREPARING FOOD WITHOUT WASHING HANDS FIRST. OBSERVED EMPLOYEE USE CELL PHONE WITH BARE HANDS AND THEN IMMEDIATELY START PUTTING ON GLOVES TO START PREPARING FOOD WITHOUT WASHING HANDS FIRST. CA: EMPLOYEES SHALL WASH HANDS WHEN CHANGING TASKS AND AFTER TOUCHING SURFACES THAT COULD CONTAMINATE THE HANDS. COS: HAD EMPLOYEES WASH HANDS AND PUT ON NEW GLOVES.
12C - wiping cloths: properly used and stored

OBSERVED DRY WIPING CLOTHS USED TO COVER STEAM WELLS. CA: DRY WIPING CLOTHS SHALL NOT BE USED TO COVER SURFACES OF FOOD STORAGE AREAS OR PREP AREAS. COS: PIC REMOVED CLOTHS AND PUT IN DIRTY LINENS. INFORMED PIC IF THEY NEEDED TO COVER THE SURFACE OF STEAM WELL, TO USE DURABLE, CLEANABLE MATERIAL.
