OBSERVED MULTIPLE READY TO EAT TCS FOODS HELD PAST DISCARD DATES ON DATE MARK LABELS (MASHED POTATOES, MAC & CHEESE, TOMATOES, CHEESE). DATE MARK LABEL STATED DISCARD ON 1/21. CA: READY TO EAT TCS FOODS HELD OVER 24 HOURS MUST BE LABELED WITH DATE MARK FOR MAXIMUM OF 7 DAYS AND BE USED OR DISCARDED BY THE DISCARD DATE ON THE LABEL. COS: EMPLOYEE DISCARDED ALL FOODS WITH PAST DISCARD DATES.

OBSERVED MULTIPLE CONTAINERS OF COMMERCIALLY PACKAGED TCS FOODS (SALAD DRESSINGS, CONDIMENTS) HELD PAST MANUFACTURER'S EXPIRATION DATE. CA: COMMERCIALLY PACKAGED TCS FOODS MUST BE USED OR DISCARDED BY MANUFACTURER'S EXPIRATION DATE. COS: EMPLOYEE DISCARDED ALL EXPIRED TCS FOOD ITEMS.

OBSERVED SPILL FROM COKE SYRUP BAGS/BOXES & CO2 SYSTEM ON FLOOR UNDERNEATH SHELF. CA: FLOORS, WALLS, AND CEILINGS SHALL BE CLEANED AS FREQUENTLY AS IS NECESSARY TO REMAIN IN CLEAN CONDITION. PIC IS HAVING COKE BAGS & BOXES REPLACED DUE TO LEAKS IN SYSTEM AND WILL HAVE FLOORS CLEANED TO SIGHT AND TOUCH.
