OBSERVED GRAVY FROM BREAKFAST IN REACH IN COOLER AT 99F AT 11:30AM. PIC STATED GRAVY WAS LEFTOVER FROM BREAKFAST THAT FINISHED AT 8AM. CA: COOKED TCS FOODS MUST BE COOLED FROM 135F TO 70F WTIHIN 2 HOURS. COS: SINCE IT HAD BEEN 3.5 HOURS SINCE BREAKFAST FINISHED, AND GRAVY WAS STILL AT 99F, PIC DISCARDED GRAVY. DISCUSSED VENTING CONTAINERS TO COOL WHEN PLACING IN COOLERS OR UTILIZING FREEZERS TO FACILITATE RAPID COOLING.
