Observed food employees actively preparing food in main kitchen with no hair restraint.COS: PIC provided hair nets.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed buildup of old food debris on gaskets and inside reach-in coolers. More frequent cleaning of sides/fronts of equipment, underneath grill. Accumulation of grease/food debris can be attraction for pests.

Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Floor sealant in main kitchen and dishwash area is peeling off. Material for indoor surfaces under conditions of normal use shall be Smooth, durable, and easily cleanable for areas where food service establishment operations are conducted.

Caulking at 3-compartment sink, and hand sinks in back of kitchen are in disrepair.Keep this areas in good repair.
