A large hotel pan of cooked chicken cooling from last night in walk-in-cooler, overfilled and uncovered. When placed in cooling or cold holding equipment, food shall be protected from overhead contamination. Per person in charge cooling is done in small containers and using ice bath to get it to 70F in 2 hrs, remaining time (4hrs) is done in walk-in-cooler uncovered. COS: Chicken will be reheated today for service and person in charge will make sure loosely covered any food item that is finishing cooling in walk-in cooler.

Ceiling peeling over prep/mop sink /hand sink area in back prep area and steam table area in main kitchen. Repair to keep ceiling smooth and easily cleanable and to prevent paint from flaking off on food/food contact surfaces. Baseboards in back prep area and around dishwasher in disrepair. Keep areas maintained to avoid entrance of pests.
Owner of restaurant will address these repairs to landlord.
