Repeat Violation: Sliced peppers were found in the WIC uncovered and subject to contamination. COS: PIC covered with plastic wrap.

Repeat Violation: Most current inspection report not displayed in the drive thru window. The top 1/3 of the inspection report must be displayed in the drive thru.

Observed several uncovered containers of raw chicken, fish, and shrimp in the Turbo Air Prep Unit in kitchen. All food must be covered to protect from contamination. COS: PIC covered all containers of raw food.

Repeat Violation: Observed containers of corn starch, flour, and rice not labeled. Any item out of its original packaging has to be labeled with its name. COS: PIC labeled all of the food containers.

Observed five wet wiping cloths laying on prep tables and not stored in sanitizing solution between uses. Wet wiping cloths used to wipe down food prep tables. COS: PIC removed all wet wiping cloths.

Observed inspection report posted behind the counter on the side wall by drive thru. The public can not walk up and read report. Inspection has to be posted in public view and where one can walk up and read within one foot. COS: PIC posted inspection report in dining area.

Observed a large container of raw catfish over ready to eat cooked shrimp. Observed one large container of cooked shrimp on shelf with raw fish, shrimp, and chicken. Can not store raw catfish over ready to eat shrimp. COS: PIC removed cooked shrimp. Put on shelf with other ready to eat foods.

Observed no person in charge when EH entered the restaurant. Employee would not let EH inspector in the kitchen. Provided employee with name and badge but still was not allowed in kitchen. Employee stated there was no one there to let EH in kitchen. No person in charge was present. I ask several time who is in charge and employee said no manager or PIC is present. COS: After a time, a man showed up and let me in and said he was the manager. Stated he had just gotten back. I explained to him that there has to be a person in charge when he is not present.

Observed soiled/stained food contact surface of Power XL microwave (inside top and sides are covered with debris/rust). Microwave has not been cleaned in several days per PIC. PIC will have it cleaned today.

Observed containers of seasoning salt, lemon pepper, salt and rice not labeled to identify them. Must be labeled when out of the original package. COS: All containers were labeled to identify them.

Observed hot holding TCS (Temperature Controlled for Safety) foods (chicken wings) below required temperature of 135°F or above. See temperature log for said items. TCS foods must be hot held at 135°F or above and not sitting on shelves and counters. COS: PIC discarded the chicken wings.

Observed current inspection report posted behind counter next to drive thru window. Inspection report must be posted within 15' of main entrance and within 1' for customers to walk up and read. COS: PIC posted current inspection report by the main entrance.

OBSERVED FROZEN FRENCH FRIES STORED LESS THAN 6" FROM FLOOR OF REACH IN COOLER. CFSM MOVED FRENCH FRIES TO PROPER LOCATION.
