Observed wet wiping cloths laying on prep table and hanging on table to dry. Cloths used to wipe down food prep tables. Wet wiping cloths have to be stored in sanitizing solution between uses and/or in designated area to dry. COS: PIC removed all wet wiping cloths.

OBSERVED MOP/CLEANING WASTE WATER BEING DUMPED ON GROUND BEHIND FACILITY. OBSTRUCTIONS ARE TO BE REMOVED FROM THE MOP SINK SO MOP WATER MAY BE DISPOSED OF PROPERLY.

Observed employee handling/preparing ready to eat foods without gloves: crab meat and cooked rice. The items are prepared and served with no kill step. Can not handle ready to eat food with bare hands. Must use gloves, tongs, wax paper, tissue paper, etc. COS: Employee washed hands and put on gloves.

Observed hand washing sink in back kitchen not working. The hot water and cold water is not available. No hand washing sink available in back kitchen. CFSM stated he has parts on order for a month. He will get a new sink by 05/24/23.
