Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F. See temperature log for said items. All TCS foods must be cold held at 41°F or below. Can not sit out on counter and not maintain temperature of 41°F or below. COS: PIC discarded all items.

Observed wet wiping cloths laying on food prep table and not stored in sanitizing solution between uses. Wet wiping cloths used to sanitize food prep tables. COS: Employee removed wet wiping cloths and put in sanitizing solution.

Observed TCS (Temperature Controlled for Safety) foods held over 24 hours (cooked corn and beef hot dogs in WIC) not properly dated and past the 7 days allowed. Cooked corn (07/10/24) Beef hotdogs (07/20/24 and 07/04/24) Old stickers not removed. COS: CFSM discarded the cooked corn and removed old date sticker from the beef hot dogs. Discussed with CFSM proper date marking and reminder to remove all expired stickers.

Observed ice cream scoop used to scoop up rice stored in a cup of water at 81°F. Can not store utensils in water between uses unless the water is 41°F or below or 135°F or above. Discussed with CFSM. COS: CFSM removed the ice scoop from the water and put it in the sink.

Observed soiled nonfood contact surfaces of the fans in the kitchen. Fans blowing in kitchen. Observed the blades covered in dust/dirt. CFSM will have them cleaned by 07/24/24.
