6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed TCS (Temperature Controlled for Safety) foods held over 24 hours not properly date marked. Observed three bags of sliced pepperoni dated 01/02/2026, cooked containers of chicken without any date marking on them, and a back of pre-cooked beef meatballs held over 24 hours without any date mark on them. All TCS foods held over 24 hours must have correct date marks on them. COS: PIC/CFSM put proper dates on all of the TCS foods held over 24 hours. Discarded any TCS foods past seven days.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed soiled nonfood contact surfaces of 3-compartment sink, mixers, coolers, etc. Observed mildew on the 3-compartment sink. CFSM will have it cleaned with three to five days.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed soiled walls in kitchen area. Also observed signs of wear and tear on the walls. Observed mildew along the wall at the three-compartment sink. CFSM stated it will be cleaned by 01/14/2026 and is working on the walls that have started showing signs of wear and tear. There are plans to paint the walls.
