Observed Ready To Eat and TCS (Temperature Controlled for Safety) food held over 24 hours not date marked when product was opened. Pork/Chicken Hotdogs were opened 12/6/24 per employee and were not date marked. Two gallons of whole milk was not date marked. Pic stated not sure when it was opened. COS: All products have been dated.

Observed soiled nonfood contact surfaces of shelves throughout kitchen area. Coolers and freezers soiled inside and outside (Frigidaire upright freezer). General cleaning needed. PIC/CFSM will have all items cleaned within five to seven days.

Observed soiled floors under and behind equipment in kitchen area. Observed a build up of black on the back room floor. PIC plans to clean floors on Christmas break.

Observed hot holding TCS (Temperature Controlled for Safety) foods below 135°F in a pan on the stove top in kitchen. ALL TCS foods must be hot held at 135°F or above. COS: PIC reheated the hamburgers to 170°F - 177°F. See temperature log for said items.

Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F in the Atosa Prep Unit. See temperature log for said items. TCS foods must be cold held at 41°F or below. Employee put items on ice since the sliced tomatoes were just sliced around 11 AM. Employee also explained to EH that she did temp the food this morning and it was not above 41°F. She will monitor the unit.
