CA: A handwashing sink shall be maintained so that it is accessible at all times for employee use. A handwashing facility may not be used for purposes other than handwashing. Pf Observed hand washing sink obstructed with a drink container and a sponge upon arrival for inspection. COS: PIC moved drink container to dish area and discarded the sponge.

CA: Food shall be stored in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. Observed food container of sausage in the deep chest freezer, food container of lettuce under the prep top cooler, food container of eggrolls in the reach-in freezer, and food containers in the walk-in cooler all without any lids or coverings.

CA: Food shall be offered for human consumption in a way that does not mislead or misinform the consumer. Observed Catfish listed on the menu and Swai fish purchases from Alliance Food Group Invoices. Advised PIC to add Swai Fish to menu.

CA: 1. Except as specified under paragraph 4 of this subsection, if time without temperature control is used as the public health control for a working supply of time/temperature control for safety food before cooking, or for ready-to-eat time/temperature control for safety food that is displayed or held for sale or service, written procedures shall be prepared in advance, maintained in the food service establishment, and made available to the regulatory authority upon request that specify: Pf Observed corn, potatoes, rice, and wings not marked and no TPHC procedure available at time of inspection. COS: PIC created date stickers and created written procedure.
