11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed large bin of rice cooling inside the reach in cooler. Based off prep time, rice would not have reached 41°F in required timeframe.
COS rice was put in smaller portions and placed inside reach in freezer.
Additionally, just prepped lamb chops were observed tightly wrapped in cooling stage. Operator loosened wrap to allow heat transfer.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed food contact surfaces stacked prior to air drying. Equipment must be allowed to air dry.
