Observed two separate containers of sour cream and string cheese (notated by asterisks in temperature log) holding at temperatures above 41F. Each container was kept in an ice bath, with only the bottom of the container actually touching the ice. Informed PIC to ensure that the containers of are completely surrounded by ice, so that they will hold at 41F or below. COS: PIC placed containers in walk-in-freezer to cool.
