12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed a pack of water being stored on the floor in the Walk-In Cooler. CA: Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least 6 inches (15 cm) above the floor. COS: PIC removed items from the floor and placed them on a shelf in the Walk-In Cooler.
17C - physical facilities installed, maintained, and clean
Observed food debris and splatter on the walls in the main kitchen. Floor along walls and beneath equipment is unclean. Observed ceilings with grease buildup and debris. CA: All physical facilities shall be maintained in good repair. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing.
Advised PIC to deep clean kitchen area.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed a cup and speaker sitting on the prep top cooler's surface. Advised PIC to have a designated area for employees' drinks and personal items. CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC moved items from the prep top cooler surface to designated storage area.
