Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
PIC stated they date mark their food by putting the discard date (7 days). Observed 4 pans of hashbrowns stored in walk in cooler with a discard date of 2/2/26. Observed 4 pans of cooked chicken date marked incorrectly. The date on the pans of chicken was 2/5/26. PIC stated a new hire put the date that it was prepped/ made. CA: Discussed with PIC to put both dates, the day it was made and the discard date on food items. COS- PIC voluntarily discarded hash browns and pans of chicken properly date marked.
