Observed multiple items placed to heat up on steam table at below 135F. COS. Items were removed and reheated in oven to 165F. CA. time/temperature control for safety food that is cooked, cooled, and reheated for hot holding shall be reheated so that all parts of the food reach a temperature of at least 165°F (74°C) for 15 seconds.

Observed build up of food debris on equipment (reach in cooler, microwave, stove, steam table, freezer chests). Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed missing light bulb shields in main kitchen. CA. light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; clean equipment, utensils, and linens; or unwrapped single-service and single-use articles.
