Upon arrival, observed paper towels stored at the top of a storage rack. Paper towels must be stored in area where they are accessible to employees. Current position allows for water from employee's hands to drip onto food or single service items on the storage rack.

Observed food stored uncovered inside reach in cooler. -raw salmon -raw shrimp -raw whiting -diced tomatoes -cilantro
COS items were covered.
Food must be stored in covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed employee preparing food while wearing a bracelet. COS employee removed bracelet, washed hands, and replaced gloves.
Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food.

Observed no water at the produce sink. Sink must be repaired; any produce requiring washing may not be used until sink is repaired.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed leak at the 3 compartment sink.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(h),(i) - approved sewage disposal; system; other liquid wastes and rainwater (p) (c)
Observed facility dump mop bucket in the front parking lot.
Condensate drainage and other non-sewage liquids and rainwater shall be drained from point of discharge to disposal according to law.
