Observed time/temperature control safety food such as beef, chicken, sour cream in two reach-in coolers were above 41F of cold holding temperature. Please see the temperature log, out of temperature food were marked with asterisk. CA: Discussed with the person in charge that time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: Person in charge discarded all food.

Several TCS foods observed stored in coolers less than 41F. Observed parmesan cheese, liquid eggs, and salad mix less than 41F. Discarded liquid eggs.

Foods, that were declared to be on "time as a public health control", did not have proper documentation. "Time" procedures not followed. Provided and discussed "time" handout with Pic. Foods on cold well, turkey, ham, yogurt, honey dew melon, tuna salad, and cut tomatoes, were discarded.
