Regulation: 511-6-1.05(8)(b) - hot water and chemical-methods(p)
Observed no in-use food-contact sanitizer (i.e. pre-diluted sanitizer) in sink or in containers for surface cleaning.
CA: After being cleaned, equipment food-contact surfaces and utensils shall be sanitized in ... [an EPA registered sanitizer for food contact surfaces]. For a contact time of at least 10 seconds for a chlorine solution between 50ppm and 100ppm... or (iii) A contact time of at least 30 seconds for other chemical sanitizing solutions. Chlorine should be between 50-100 parts per million (ppm) and quaternary ammonia (quat) should be between 150 to 400ppm depending on label instructions.
COS: Inspector demonstrated using Sterimine-brand (quat) tablets in 3-compartment sink
