Observed multiple containers of foods stored without lids or wrapping in reach-in coolers.

CA: Store the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination.

COS: PIC placed lids and plastic wrap over containers without lids

Observed tomatoes, lettuce, shredded cheese, and raw chicken cold holding above 41F (see * on temperature log). COS - food discarded and replaced with food in temperature.

Observed meats and soups stored in reach in cooler uncovered and subject to contamination. COS - food covered with plastic wrap.

Observed large containers of rice and pork cooling at room temperature on counters. COS - food placed in coolers to cool properly

Observed food stored improperly in RIC with raw beef stored under poultry and raw poultry stored above ready to eat foods. COS - PIC rearranged food in proper storage order.

Upon arrival observed no available paper towel at the hand sink in the main kitchen. Advised PIC that the hand sink shall be fully stocked with soap and paper towels at all times. COS: Employee restocked hand sink with paper towels.

Observed meats and vegetables stored under prep top cooler uncovered. COS - PIC covered foods to prevent contamination.
