11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed eggs, cheese, and turkey sausage that were prepared within the past four hours stored in the cooler with lids tightly closed.
CA: (e) Cooling Methods.
- Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled:
(i) Placing the food in shallow pans; Pf
(ii) Separating the food into smaller or thinner portions; Pf
(iii) Using rapid cooling equipment; Pf
(iv) Stirring the food in a container placed in an ice water bath; Pf
(v) Using containers that facilitate heat transfer; Pf
(vi) Adding ice as an ingredient; Pf or
(vii) Other effective methods. Pf
- When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be:
(i) Arranged in the equipment to provide maximum heat transfer through the container walls; and
(ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
PIC was advised to loosely cover or uncover hot foods during the cooling process to allow for rapid heat transfer and ensure proper cooling parameters are met (from 135F to 70F within 2 hours and from 70F to 41F within an additional 4 hours).

Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed a consistent leak at the three-compartment sink in the main kitchen.
CA: (r) System Maintained in Good Repair. A plumbing system shall be repaired according to law; P and maintained in good repair.
PIC was advised to repair the leak to prevent water accumulation and potential contamination hazards.

Observed permit fees were unpaid at the time of inspection.
CA:1. Post the permit in a location in the food service establishment that is conspicuous to consumers
PIC was advised that all outstanding permit fees must be paid by the due date indicated on the NOV

Observed inspection report was not posted at the drive-through window as required.
CA:2. Food service establishments with drive-thru windows will post the current inspection report, and also have the inspection report posted so that a minimum of the top one-third of a copy of the current inspection report is visible through each window allowing customers to easily read the score, date of inspection and establishment information.
PIC was advised that the most current inspection report must be posted in a location visible to the public at all times.

Observed front food service cooler holding at 45°F which is above the required 41°F for TCS foods.
CA: (6) Maintenance and Operation.
(a) Good Repair and Proper Adjustment.

Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule.

Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Cutting or piercing parts of can openers shall be kept sharp to minimize the creation of metal fragments that can contaminate food when the container is opened.
COS: PIC voluntarily relocated all TCS foods to the walk-in cooler to maintain proper cold holding temperatures.
