Observed time/temperature control for safety (TCS) food cold holding above 41F.See temperature log. CA: Informed PIC that TCS food must be held at 41F or lower for cold holding. COS: Food cold holding for more than 4 hours was voluntarily discarded by person in charge.

Observed salad tightly closed in a single use container while cooling at the front food services area. COS: Salad was placed in the walk in cooler and Ice bath was used to cool down some of the salads.CA: Informed person in charge to let salad cool down properly in the cooler, using and ice bath or Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

Observed food employee with a watch on while serving food at the food front service area. COS: Watch was removed and proper hand wash was conducted. CA: Jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food

Observed 2 dead roaches in main kitchen near 3 compartment sink. Observed 3 live roaches near serving line in cafeteria. COS- all dead roaches were removed from kitchen. All live roaches were killed and removed from cafeteria. Advised to increase pest control and email current pest control report to Ashley.clark1@dph.ga.gov

COS- Milk, Shredded Cheese, chicken breast were discarded by PIC. Advised not to use walk in cooler until serviced.
