Observed food employee touch/handle customer's credit card then engage in food preparation, handle clean equipment and utensils without washing hands. Corrected. Employee washed hands after being advised. Discussed the importance of proper handwashing.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Bulk 1/2 gallon containers of coleslaw and milk, held longer than 24 hours, were not datemarked once opened nor discarded within 7 days after opening. Corrected - both items were voluntarily discarded.
