Observed sanitizer solution in three compartment sink at incorrect concentration for quaternary sanitizing solution. Upon examination, sanitizing solution apparatus was observed to be in disrepair, resulting in improperly dispensed sanitizer solution. Instructed PIC to manually make sanitizer solution until maintenance repairs apparatus.
CA: A quaternary ammonium compound solution shall have a minimum temperature of 75ºF (24ºC), P have a concentration as specified in DPH Rule 511-6-1-.07(6)(g) and as indicated by the manufacturer’s use directions included in the labeling. s COS: PIC remade all sanitizer solution manually using chlorine packets, as per manufacturer specifications. Checked concentration of chlorine sanitizer with appropriate chlorine test strips.

Observed food handler pat her head, take credit card authorization and cash transactions from drive-thru window and then prepare drinks without washing her hands in between tasks. Observed a pitcher being stored inside the hand sink nearest the ice machine upon arrival. A trash bin is also blocking the same hand sink upon arrival. Ca: 1. A handwashing sink shall be maintained so that it is accessible at all times for employee use. 2. A handwashing facility may not be used for purposes other than handwashing. COS person in charge relocates pitcher and trash bin.

Observed employee wearing hand and wrist jewelry while handling food. Ca: Jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS food handlers remove hand/wrist jewelry and puts on gloves.

Observed food handler with painted nails handling food without gloves. Ca: Fingernails. Employees shall keep their fingernails clean and trimmed to no longer than the tips of the fingers. Unless wearing gloves in good repair, a food employee may not wear fingernail polish or artificial fingernails when working with exposed food. COS food handler puts on gloves.

Observed two food handlers with hair longer than 1 1/2 inch without proper hair restraint. Ca: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. COS food handlers put on hair nets.

Observed cracked ice scoop buried in the ice in the ice machine. Ca: )Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: 1.Except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container. COS person in charge removes and discards ice scoop into the trash bin. Ice is discarded into the trash per request of inspector.
