Observed all raw animal products stored together within walk-in cooler. Observed eggs stored above RTE salsa.
CA: Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from: Raw ready-to-eat food, cooked ready-to-eat food, and ... except when combined as ingredients, separating types of raw animal foods from each other such as beef, fish, lamb, pork, and poultry during storage.

Observed cooked meats and other TCS foods not held at 135 degrees Fahrenheit or above. PIC stated they had been cooked to boiling point then placed in steam table at 8 am. Temperatures noted below with asterisks observed at 11am.
CA: Time/temperature control for safety food shall be maintained at 135°F (57°C) or above.
COS: PIC discarded all foods held below 135F, advised to keep empty space within a steam well covered to hold heat in and to regularly check and log food temperatures

Observed drain blockage for mop sink, PIC stated they do not use the drain for the mop sink.
CA: Service Sinks, Numbers and Capacities. At least one service sink or one curbed cleaning facility equipped with a floor drain shall be provided ... for the disposal of mop water and similar liquid waste. Toilets and urinals may not be used as a service sink for the disposal of mop water and similar liquid waste.

CA: Areas designated for employee items shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.

I observed no towels available at hand sink next to ice machine also towel dispenser next to hand sink in kitchen is malfunctioning and it is too hard to get towels out. Need soap and towels available at all hand sinks.
