CA: Discussed with the person in charge that cooling should be accomplished by Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

COS: TCS foods delivered and prepped day of inspection relocated to another cooler (various deli meats, lettuce, sliced tomatoes, 1 bag of cheese) TCS foods holding in cooler overnight discarded (various deli meats and cheeses).

Upon arrival only hand sink blocked with cutting board stored on top. COS: cutting board relocated to 3-compartment sink. Discussed that hand sink shall be easily accessible at all times
