2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(c) - when to wash (p)
Observed an employee pick up soiled pen off the floor then proceed to the waffle making station and close two waffle makers without washing hands. CA: Food employees shall clean their hands and exposed portions of their arms immediately after engaging in other activities that contaminate the hands.
COS: Employee voluntarily washed hands and sanitized the soiled areas of the waffle maker.
4-2B - food-contact surfaces: cleaned & sanitized

Observed pink matter in the ice machine where ice is dispensed.
CA: Equipment food-contact surfaces and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil or mold.
Discussed with PIC to clean the ice machine as soon as possible. The ice machine must be cleaned more frequently to preclude accumulation of soil or mold.
