Observed a vegetable dicer with a blade missing and another blade badly damaged. The vegetable dicer was located across from the 3-compartment sink and not in-use at the time of inspection. CA: All equipment shall be maintained in good repair. COS: The PIC placed the vegetable dicer in the office with a "do not use" sign, so employees will not use it. They stated they would order replacement blades for it. Advised to train employees to check equipment for any damage prior to using it, and to immediately discontinuing using equipment that has been damaged.
