Observed milk cold holding at 51F. CA: TCS foods shall cold hold at 41F or below. COS- PIC voluntarily discarded milk.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
No certified food safety manager (CFSM) certificate posted for public view and no copy made available for health authority. PIC indicated that they no longer have a CFSM at the facility.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed the ice machine with a heavy accumulation of mold build up on the upper interior. CA: All food and non food contact surfaces shall be cleaned regularly and by sight and touch to prevent build up. COS- PIC started to melt ice.
