Containers of chemical sanitizing solutions in which wet wiping cloths are held between uses shall be stored off the floor and used in a manner that prevents contamination of food, equipment, utensils, linens, single-service, or single-use articles.
COS: PIC instructed food service employees to remake sanitizer buckets with proper sanitization levels.

Observed black organic substance along the back interior surface of the ice bin and unclean ice tray beneath the drink machine.
Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
COS: PIC instructed food service employee to dump ice, clean, and sanitize ice bin before replacing ice.

CA: Damp/in-use wiping cloths shall be stored in sanitizing solution between use. Observed 2 of 3 wiping cloth buckets at 0ppm chlorine solution. COS- Wiping cloth bucket solution refreshed and 100ppm chlorine achieved. Discussed with the PIC to ensure that they are checking with sanitizer test strips for the correct concentration (not too high not too low).

Observed soiled reach-in cooler gaskets, walk-in cooler shelves and interior bottom of the 2 large Delfield coolers. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
