Observed half empty water bottles stacked in the cooler near food that is cooked and served. According to employees they are using them for drinking.
CA: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.
COS: PIC voluntarily discarded the bottles. Discussed with PIC to use single service cups with a lid and a straw
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
No seal was observed, and light was visible shining through the bottom of the exit door in the back of the kitchen.
CA: Outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors.
Discussed with PIC to seal the door as soon as possible. Once the door seal is fixed email the photo proof.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed heavy oil debris/grime on the floor in the main kitchen behind the reach in coolers on the right.
CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
Discussed with PIC to clean the areas as soon as possible to prevent food contamination of food products.
