Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed no paper towel in one of the hand sinks (next to the three compartment sink). CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with: Individual, disposable towels; A continuous towel system that supplies the user with a clean towel. COS: Paper towel was replaced.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed the drink station/soft drinks station (drinks dispenser/racks) to be unclean with black-like build up. (see attached pictures). CA: Surfaces of utensils and equipment contacting food that is not time/temperature control for safety food shall be cleaned: At any time when contamination may have occurred; preventing contamination. Advise person in charge to always make sure the drink station racks/dispensers are cleaned out frequently.

Observed gnats flying around the kitchen area. CA: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: Routinely inspecting incoming shipments of food and supplies; Routinely inspecting the premises for evidence of pests. Informed person in charge to get a commercial pest services

Observed gaps at the back door of the kitchen. CA: CA: outer openings of a food service establishment shall be protected against the entry of insects and rodents by: Filling or closing holes and other gaps along floors, walls, and ceilings; Closed, tight-fitting windows; and Solid, self-closing, tight-fitting doors.
