WATERSIDE RESTAURANT

Observed employee fetching water in the hand sink and in an attempt to correct the violation, ice water was disposed in the hand sink. CA: Informed employee and PIC (Person in charge) that a handwashing facility may not be used for purposes other than handwashing. COS: Water fetch from the hand sink was not utilized.

Observed several TCS/Ready to eat (RTE) food tightly covered while it's cooling phase. CA: Advised that once food is cooked or cooked and it reaches 135F, a rapid cooling method must be performed. Smaller portions, placed in the walk in cooler (uncovered) or the deep freezer to cool. COS: All Cooling TCS/RTE foods were uncover/loosely covered and put into the reach in cooler and ice bath to cool food to 41F.

Observed wet trays/pots stacked while still wet. CA: Equipment and Utensils, air-Drying Required. After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food. Must be corrected by 5/27/2024.

Observed cups and knifes and other items store in the kitchen that are not in use. Informed PIC to dispose of the unnecessary items in the kitchen area.
